Kudumulu Recipe

Ingredients:

  • 1 cup of rice flour
  • 2 tbsp chana dal
  • ¼ cup of grated coconut
  • ½ tsp cumin seeds
  • 1 tsp ghee
  • Pinch of salt

Procedure:

  • Soak the chana dal in warm water for 10 minutes. Drain and set it aside.
  • Heat ghee in a pan, add the chana dal and fry it for 1-2 minutes.
  • Add water and a pinch of salt to this and bring to a boil.
  • Now add rice flour and keep stirring, avoiding any lumps. Cook till the water completely evaporates. Simmer for another 2 minutes and turn the flame off.
  • Now add the grated coconut and mix well. Cover the pan with a lid and let it sit for 15 minutes.
  • Wet your palms and knead this mixture to a smooth dough. Divide the dough into equal portions and shape it into balls.
  • Boil some water in a steamer and steam these dough balls for 7-8 minutes.
  • Serve it warm.

Undrallu Payasam Recipe

Ingredients:

  • 3 cups of milk
  • 1 cup of rice flour
  • 1 cup of sugar
  • Pinch of green cardamom powder
  • 3 tbsp sabudana 
  • Few drops of oil

Procedure:

  • Combine one cup of water with rice flour and a few drops of oil, heat this mixture till the water evaporates completely.
  • Grease your palms with some oil and knead the rice flour into a smooth dough. Make small balls using this dough (as small as the size of a grape).
  • Steam these dough balls for 5-7 minutes and set it aside.
  • In a separate pan, heat the milk and add sabudana. Allow it to cook till the sabudana turns translucent and appears cooked.
  • Add sugar to this and allow it to melt completely. Now add the steamed dough balls to the milk and let it cook for 6-8 minutes.
  • Add green cardamom powder and simmer for 2-3 minutes.
  • Sprinkle some chopped pistachios and serve warm.

Ingredients:

  • 2 tbsp black chana 
  • 2 tbsp green gram
  • 2 tbsp moth beans
  • 2 tbsp urad dal
  • 2 tbsp rajma
  • 2 tbsp black eyed peas
  • 2 tbsp toor dal
  • 2 tbsp sesame seeds
  • 2 tbsp peanuts
  • 4-5 curry leaves
  • ¼ tsp mustard and cumin seeds
  • ¼ tsp turmeric and hing
  • 1 dry red chilli 
  • ½ cup of grated coconut
  • 1 tbsp oil 
  • Salt as required

Procedure:

  • Soak all the legumes overnight and keep ready.
  • Wash and drain it. Transfer it to a pressure cooker, add a pinch of salt and turmeric powder. Mix it well and cook it for 1-2 whistles.
  • Allow it to depressurize on its own and drain the excess water. Set it aside.
  • Heat oil in a separate pan, add mustard seeds, cumin seeds and red chilli. Once it starts crackling. Add hing and curry leaves.
  • Drizzle this tempering over the cooked legumes, add coconut and give it a good toss.
  • Serve warm or at room temperature.
