Cabbage Kofta

Cabbage Kofta Recipe

Ingredients:

  • 2 cups of shredded cabbage
  • 1 finely chopped onion
  • 1 cup of shredded coconut
  • ½ tsp garam masala and coriander powder
  • 1 tsp red chilli powder
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 2 tbsp besan
  • 2 tbsp oil
  • ½ tbsp coriander seeds and poppy seeds
  • 4 garlic cloves
  • 2 finely chopped green chillis
  • 2 diced onions and tomatoes
  • 2 tbsp coriander leaves
  • ½ tsp sugar
  • 2 tbsp cashew paste
  • 1 cup of water
  • Oil (for frying)
  • Salt as needed

Method:

  • In a mixing bowl, combine shredded cabbage, chopped onion, garam masala, coriander powder, red chilli powder, cumin powder, turmeric, besan and oil. Mix it all well and place it in the refrigerator for 15 minutes.
  • Heat some oil in a pan for frying. Take a dollop of the cabbage mixture in your palm and shape it into a kofta. Prepare all koftas like this and deep fry them until it turns crisp and golden brown.
  • Once all koftas are ready, soak the excess oil and set it aside.
  • Dry roast poppy seeds and coriander seeds and put it in a mixer grinder together with garlic, green chillis and coriander leaves and pulse it a few times.
  • In a separate pan, heat some oil and add onions and tomatoes to it. Saute it for a couple of minutes. Now add water, sugar, salt, ground mixture and simmer it for 4-5 minutes.
  • To this, add the cashew paste and prepared koftas and cook for 2-3 minutes.
  • Sprinkle some freshly cut coriander leaves and serve hot.

Cabbage Pakoda

Cabbage Pakoda Recipe

Ingredients:

  • 2 cups of shredded cabbage
  • 1 thinly sliced onion
  • 1 cup of besan
  • ¼ cup of rice flour
  • 1 tsp red chilli powder
  • Pinch of turmeric and hing
  • 1 tsp ginger-garlic paste
  • 2-3 curry leaves
  • Salt as needed

Method:

  • In a large mixing bowl, combine all the ingredients and mix it well without adding water. 
  • Divide the batter into equal portions and roughly shape each one of it into balls. 
  • Heat a deep pan with oil for frying. Deep fry each pakoda until it turns golden brown.
  • Soak the excess oil and sprinkle chaat masala.
  • Serve it hot with ketchup and mint chutney. 

Cabbage Pakoda

Cabbage Rolls Recipe

Ingredients:

  • 500gm of cabbage
  • 250gm of paneer
  • 1 onion (finely chopped)
  • 1 tbsp mixed sprouts
  • ½ green capsicum (chopped)
  • ½ cucumber (chopped)
  • 2 finely chopped green chilli
  • 1 tbsp chopped coriander leaves
  • 1 tsp butter
  • 1 tbsp lemon juice
  • Salt and pepper as needed

Method:

  • Wash the cabbage properly and steam it in a microwave in a cling foil covered bowl.
  • Meanwhile, in a separate mixing bowl, combine paneer, onion, capsicum, cucumber, butter, lemon juice, green chilli, mixed sprouts, coriander leaves, pepper and salt. Mix all the ingredients well.
  • Fill each blanched cabbage leaf with the paneer-sprouts stuffing and wrap it neatly.
  • Grease each cabbage roll with some butter and place it in the microwave for 3-4 minutes.
  • Sprinkle some coriander leaves and serve it hot with cabbage salad and yogurt dip.
