Recipes to Enjoy During Monsoon with Your Hot Cup of Tea

Stuffed Corn Cheese Pullouts

Ingredients:

  • 6 white pavs
  • ¾ cup of grated cheese
  • ½ cup of partially crushed sweet corn
  • ¼ cup of chopped cabbage
  • ½ cup of mixed peppers
  • ¼ cup of chopped onions
  • ¼ cup of chopped spring onions
  • 2 tbsp chopped coriander leaves
  • 2 tbsp of schezwan sauce
  • 1 tsp finely chopped green chillis
  • 1 tsp tomato ketchup
  • 1 tbsp of minced garlic
  • 4 tbsp of melted butter
  • Salt and black pepper as needed

Method:

  • Place the six pieces of pav on a flat surface. Using a sharp knife, make horizontal and vertical slits across the pavs. Set it aside.
  • In a mixing bowl, combine cheese, crushed corn. cabbage, onions, mixed peppers, salt, black pepper, coriander leaves, schezwan sauce, tomato ketchup and green chillis. Mix all the ingredients well.
  • Now take a spoonful of the stuffing and put it in each of the pav slits.
  • In another small bowl, mix melted butter, garlic and spring onions. Brush this mixture generously on the pavs.
  • Wrap the stuffed pavs in aluminum foil and place it in a preheated oven for 12-15 minutes.
  • Open the foil and serve immediately.

Aloo Poha Pakodas

Ingredients:

  • 1 ½ cups of poha
  • ½ cup of mashed potatoes
  • 3 tbsp chopped coriander leaves
  • 1 tsp finely chopped green chillis
  • 1 tsp red chilli powder
  • ½ tsp cumin seeds
  • ½ tsp sugar
  • 1 tsp lemon juice
  • 2 tsp chaat masala
  • Vegetable oil (for frying)
  • Salt as needed

Method:

  • Wash the poha properly and drain excess water. Transfer the poha to a big mixing bowl.
  • Now add the mashed potatoes, coriander leaves, green chilli, red chilli powder, cumin seeds, sugar, salt and lemon juice. Mix all the ingredients well.
  • Divide this mixture into equal portions and shape each of them into small round balls.
  • Heat a pan with vegetable oil and deep-fry each pakoda till it turns golden-brown. Let it rest on a tissue paper until the excess oil gets absorbed, then sprinkle chaat masala.
  • Serve hot with tomato ketchup and mint chutney.

Paneer Kebabs

Ingredients:

  • 200gm paneer (mashed)
  • 2 cups of boiled potatoes (mashed)
  • ½ cup of grated cheese
  • ¾ cup of breadcrumbs
  • 1 tsp cumin powder
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp ginger-garlic paste
  • 1 tbsp sesame seeds
  • Vegetable oil (for shallow frying)
  • Salt as needed

Method:

  • In a mixing bowl, combine mashed potatoes, paneer, cheese, ¼ cup of breadcrumbs, cumin powder, red chilli powder, turmeric powder, ginger-garlic paste and salt.
  • Mix all the ingredients well.
  • Take a spoonful of this mixture and shape it into flat kebabs. Coat each kebab with breadcrumbs and sesame seeds.
  • Heat a pan with some oil and shallow fry the kebabs. Flip it over to cook both sides until they turn golden-brown.
  • Alternatively, you can also bake these kebabs if you don’t with to fry. In this case, place the kebabs in a preheated oven for 10-12 minutes and cook both sides.
  • Serve it hot with mint-yogurt dip and tomato ketchup.
