Paan Thandai

Ingredients

  • 2 paan/betel leaves
  • 3 cups of milk
  • 3 green cardamom pods
  • 4-5 pistachios
  • 1 tbsp fennel seeds
  • 2 tbsp sugar
  • Pinch of saffron

Procedure

  • Crush the paan leaves and add it to a mixer grinder. To this, add the cardamom pods, fennel seeds, pistachios and a little bit of milk. Grind this mixture to a fine consistency.
  • Heat the milk in a vessel and bring it to a boil. Add sugar to this and bring it to a boil again. Let it cool down and refrigerate the milk for 2-3 hours.
  • Blend the refrigerated milk and paan leaves mixture together and refrigerate it for another hour.
  • Garnish it with some chopped dried fruits, saffron and serve it cold.

Badam Phirni

Ingredients

  • ½ cup of white rice
  • 3 cups of milk
  • 1 cup of sugar
  • 12-15 blanched and peeled almonds
  • 2 tsp green cardamom powder
  • 1 tsp rose water
  • Pinch of saffron strands

Procedure

  • Wash and soak the rice for ten minutes. Drain the water and allow it to air-dry.
  • Place the rice grains in a coffee grinder and grind it to a powder like or rava-like consistency. Set it aside.
  • Soak a few saffron strands in some warm milk and keep it aside.
  • Heat the rest of the milk in a thick-bottomed vessel and bring it to a boil.
  • After this, add the grounded rice and sugar to it and allow it to cook for 8-10 minutes. Keep stirring occasionally so that there are no lumps.
  • When the rice looks almost cooked, add the chopped almonds, green cardamom powder and soaked saffron strands. Allow it to cook for 3-4 minutes and turn off the flame.
  • Add the rose water and allow the phirni to cool down or refrigerate it.
  • Garnish it with some sliced almonds and serve it cold.

Khoya Paneer Sabzi

Ingredients

  • 1 ½ cups of diced paneer
  • 1 cups of chopped cashew nuts
  • ½ cup khoya/mawa
  • ¼ cup plain yogurt
  • 2 tbsp ghee
  • 1 tsp chopped green chilli
  • 2-3 green cardamom pods
  • Salt to taste

Procedure

  • Soak, boil and grind the cashew nuts to a smooth paste.
  • Heat the ghee in a pan and add the green cardamom pods and chopped green chillis.
  • Once it starts to crackle, add plain yogurt, cashew paste and some salt. Mix it well and allow it to cook for 5-6 minutes.
  • To this, add the khoya and paneer cubes and cook for 3-4 minutes till all the ingredients bind together.
  • Sprinkle some chopped coriander leaves and serve it hot.

Chhena Malpua

Ingredients

  • 1 cup of malai paneer
  • 4 tbsp of khoya/mawa
  • ½ cup of milk
  • 1 tsp powdered sugar
  • 1 tsp green cardamom powder
  • 2 tbsp maida
  • 1 cup of ghee
  • 1 cup of sugar
  • Pinch of saffron strands
  • 1 cup of assorted nuts

Procedure

  • Add the malai paneer, khoya and milk to a mixer grinder and grind it roughly.
  • Transfer this batter to a deep bowl and whisk it well to a smooth consistency.
  • To this, add powdered sugar, maida and green cardamom powder and mix it well.
  • Heat the ghee in a deep pan. Drop roughly about one tablespoon of the batter in the hot ghee and allow it to cook till it turns golden brown. Flip the malpua and cook the other side. Repeat this step and prepare the other malpuas in the same way.
  • Heat a separate pan and add about two cups of warm water, sugar and saffron strands. Allow the sugar crystals to dissolve completely. To this, add the assorted nuts and let it cook for 1-2 minutes.
  • Place each malpua in this sugar syrup and allow it to stay immersed for 12-15 minutes.
  • Once the malpua soaks most of the sugar syrup, transfer it to a clean plate.
  • Garnish it with some chopped assorted nuts and serve it hot.
