Delicious Milk-Based Desserts that can be easily made at Home

Milk is a super versatile ingredient that can be used to prepare a variety of Indian desserts that are enjoyed by all age groups.  Here are 3 milk-based recipes that can be easily prepared at home

Javvarisi Payasam


  • ½ cup javvarisi/sabudana
  • 2 cups milk
  • 2 cups water
  • 8-10 cashew nuts
  • ½ cup sugar
  • 1 tbsp. ghee
  • ½ tsp. green cardamom powder
  • Pinch of saffron strands


  • Heat the ghee in a heavy bottomed vessel and shallow fry the cashew nuts. To this, add the javvarisi and cook it for 2-3 minutes.
  • Now add in the water and simmer it for 4-5 minutes or until the javvarisi appears slightly cooked and turns translucent.
  • Then add the milk and sugar, and let it simmer for 7-8 minutes. Once the sugar dissolves completely, add the green cardamom powder and saffron strands.
  • Allow it to simmer for another 5-6 minutes or until all the ingredients are blended together and the mixture looks slightly lumpy.
  • Serve the payasam chilled or warm.

Caramel Custard


  • 1 cup powdered sugar
  • 1 cup warm milk
  • 1 tbsp. hot water
  • 2 eggs, beaten
  • 1 tsp. vanilla essence


  • In a saucepan, mix one tablespoon water with half a cup of sugar and simmer it on medium flame and allow it to cook till the sugar dissolves completely and turns slightly golden brown. Do not stir it. Turn the flame off and set it aside.
  • In a separate pan, whisk the milk and the remaining sugar over low flame. Once the sugar starts dissolving, turn off the flame and whisk the eggs into this mixture.
  • Now pour the sugar syrup into a small baking dish and then pour the eggs-milk mixture into it.
  • Place this baking dish inside a larger baking dish and fill it with up to one inch with water.
  • Place it in a preheated oven for 15 minutes, until the custard sets. Take it out and let it cool for another 10 minutes.
  • Chill it in a refrigerator before serving it.



For chenna

  • 1 litre full fat milk
  • 2 tbsp. lemon juice

For Sugar syrup

  • 2 cups sugar
  • 6 cups water

For rabdi

  • 1 litre full fat milk
  • ½ cup sugar
  • 5 chopped almonds and pistachios
  • ½ tsp. green cardamom powder
  • Pinch of saffron strands


  • For chhena, boil the milk and add lemon juice to it. Keep stirring it until the milk curdles. Once curdled, squeeze the excess water and knead the chhena. Then divide the chhena into equal portions and make small balls and flatten. Keep this aside.
  • For the sugar syrup, heat the water and add sugar to it. Let it simmer until the sugar dissolves completely. Turn the flame off and allow it to cool down.
  • Now soak the chenna balls into the sugar syrup for 10 minutes.
  • For rabdi, bring the milk to boil until a layer of cream forms over the milk. Repeat this process until the milk reduces to one third of its quantity. Now add the sugar, cardamom powder and saffron strands. Stir it well and bring it to a boil. Allow this to cool down and chill it in the refrigerator for 2-3 hours.
  • Garnish it with chopped pistachios and almonds. Serve it chilled.
