Baingan Ka Bharta

  • 1 large eggplant
  • 1 cup of chopped onions
  • 1 cup of chopped tomatoes
  • 1 cup of plain curd
  • 1 tsp turmeric and coriander powder
  • 1 tsp garam masala
  • 2 tsp red chilli powder
  • 2 tsp ginger-garlic paste
  • Salt as required


  • Roast the eggplant directly on the flame. Once the outer peel starts turning dark and crisp, take it off the flame and peel the skin off. 
  • Mash the roasted eggplant and set it aside. 
  • Heat some oil in a pan and add onions and ginger-garlic paste. Once the onions turn slightly transparent, add the tomatoes and cook for 2-3 minutes. 
  • To this, add turmeric, red chilli powder, coriander powder and garam masala. Mix it all well and then add the curd. 
  • Now add the mashed eggplant and stir everything well. Allow the mixture for 4-5 minutes.
  • Sprinkle some finely chopped green chillis and coriander leaves, and serve it hot.

  • 2 large eggplant (sliced)
  • 1 cup of grated cheddar cheese
  • 2 eggs (whisked)
  • Tomato Puree
  • 8-10 sliced olives
  • 3-4 cloves of garlic
  • 2 tsp olive oil
  • 2 tsp oregano and chilli flakes
  • Bunch of basil leaves
  • Pinch of black pepper
  • 1 tbsp butter 
  • Salt as required


  • To prepare the tomato sauce, heat some butter in a pan, add tomato puree, oregano, basil leaves, chilli flakes, pinch of salt and pepper. Bring it to a boil and set it aside.
  • Dip each eggplant slice into the whisked egg wash and then dip one side of it in grated cheese. Repeat this process with all eggplant slices.
  • In a pan, heat some olive oil and cook both sides of the sliced eggplant until it turns slightly brown. 
  • Now layer these cheesy eggplant slices on top of each other in a baking dish. Add a generous amount of tomato sauce onto it and allow it to trickle down.
  • Place the baking dish in the oven and bake it until the sauce turns warm. 
  • Serve immediately.

Hyderabadi Bagara Baingan

  • 500g of baby brinjals (slit from middle)
  • 1 cup of chopped onions
  • ½ cup of grated coconut
  • ¼ cup of peanuts
  • 2 tbsp sesame seeds
  • 3-4 dry red chillis
  • 1 tbsp coriander seeds
  • 1 inch of ginger
  • 4-5 cloves of garlic
  • ½ tsp mustard and fenugreek seeds
  • 2 tsp tamarind paste
  • 8-10 curry leaves
  • 1 tbsp crushed jaggery
  • 1 tsp red chilli powder
  • Salt as required


  • Heat a pan and dry roast the chopped onions, ginger and garlic cloves. Set it aside. 
  • In a separate pan, dry roast the grated coconut until it turns slightly brown and set it aside.
  • In another pan, dry roast the sesame seeds, coriander seeds, peanuts, and dry red chillis. 
  • Now grind all the roasted ingredients together into a smooth paste and set it aside. Add a little bit of water if needed. Keep it aside.
  • Heat some oil in a pan, shallow fry the brinjals and drain.
  • In the same oil, add fenugreek seeds, mustard seeds and curry leaves. Once it starts crackling, add red chilli powder, salt and half a cup of water. Allow it to cook for 2-3 minutes. To this, add tamarind paste and jaggery and cook for another 1-2 minutes.
  • Now add the fried brinjals and mix it well. Allow it to cook for 2-3 minutes and serve hot.
