Barley Brown Rice

  • ½ cup cooked barley
  • ½ cup cooked brown rice
  • ½ cup red kidney beans
  • ½ cup boiled sweet corn
  • ½ cup pomegranate seeds
  • Few fresh basil and mint leaves
  • 2 tsp lemon juice and orange juice
  • Salt and pepper to taste


  • Prepare the dressing by mixing orange juice, lemon juice, salt and pepper in a small bowl.
  • In a separate mixing bowl, add the barley, brown rice, kidney beans, corn, pomegranate seeds and some salt.  
  • Pour the lemon-orange juice mixture over the rest of the ingredients.
  • Garnish it with mint and basil leaves and serve it slightly chilled.

Grilled Corn Cob

  • 4 small corn cobs
  • 1 cup of corn kernels
  • 1 tsp lemon juice
  • 1 tsp grated ginger
  • 1 tsp olive oil
  • Salt and pepper to taste


  • Heat a frying pan with some oil and add the corn cobs and corn kernels in it. Stir-fry it for 5-6 minutes till it appears slightly cooked and golden brown.
  • The corn will start popping as it does when it is grilled.
  • Turn off the flame and add the lemon juice, black pepper, salt and grated ginger and mix it well.

Serve this summer meal with a sprinkle of chaat masala and coriander leaves.

Cucumber Bean Salad

  • 1 cup of thinly sliced cucumber
  • ½ cup of cooked kidney beans
  • ½ cup of cooked chickpeas
  • 2 tbsp of coarsely grounded cashews
  • 2 tbsp grated coconut
  • 1 tbsp finely chopped mint leaves
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt, sugar and pepper to taste


  • In order to make the dressing, take a small bowl and add olive oil, lemon juice, salt, pepper and a little bit of sugar. Mix it well and set it aside.
  • In a separate bowl, add the cucumber, kidney beans, chickpeas, mint leaves, coconut and cashews and mix it thoroughly.

Right before serving it, pour the dressing on top of the salad and give it a good stir.  Serve it warm or cold, however you like it.

Spicy Watermelon Beet Soup

  • 3 cups of diced watermelon (deseeded)
  • ½ cup of boiled beetroot
  • 1 tsp of ginger paste
  • 3-4 chopped mint leaves
  • ½ tsp chilli flakes
  • 1 tbsp olive oil
  • Salt and pepper to taste


  • Heat the olive oil in a pan and sauté the chilli flakes and ginger paste in it.
  • Blend the watermelon and beetroot to a fine consistency and add this puree to the pan. Season it with some salt and black pepper.
  • Simmer and allow it to cook until the mixture slightly thickens.
  • Let it cool and chill it for 1-2 hours before serving it.

Serve this healthy summer recipe with a few ice cubes and a generous garnish of mint leaves.

Orange Kheer

  • 4 cups of full fat milk
  • 2 cups of peeled and chopped oranges
  • 10-12 thinly sliced almonds
  • 1 tbsp of shredded pistachios
  • ½ cup of sugar
  • 2-3 green cardamoms


  • Boil the milk in a deep and wide pan, add the sugar and green cardamoms and allow it to simmer for a few minutes.
  • Once the milk and sugar start caramelizing, the mixture will change its color and become thick. This is when you turn off the flame and allow it to cool down.
  • Add the orange pieces and mix it well till it binds together.
  • Garnish it with almonds and pistachios and serve it warm.
